Ingredients

The Cupcake Batter

  • 2 ¼ cups all-purpose flour
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1 cup cocoa powder
  • 2 teaspoons baking soda
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons kosher salt
  • 1 cup hot coffee
  • 1 cup sour cream
  • 3 large eggs
  • 3 tablespoons olive oil or avocado oil
  • 2 teaspoons pure vanilla extract

The Filling

  • 1 container (7 ounces) marshmallow fluff
  • 2 tablespoons unsalted butter

The Ganache Frosting

  • 4 ounces dark chocolate, finely chopped
  • 4 ounces milk chocolate, finely chopped
  • ½ cup heavy cream
  • 2 tablespoons unsalted butter
  • a pinch kosher salt

The Frosting for Writing

  • ½ cup powdered sugar
  • ¼ cup unsalted butter

Instructions

  1. Preheat the oven to 350°F and prepare a cupcake tin with liners.
  2. Mix the dry ingredients: flour, sugars, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate bowl, whisk together the coffee and sour cream until smooth, then add eggs, oil, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Fill each cupcake liner halfway and bake for 15 to 18 minutes until a skewer comes out clean.
  6. Allow the cupcakes to cool before filling.
  7. For the filling, mix marshmallow fluff and softened butter until smooth.
  8. Use a knife to carve out a small hole in the tops of each cupcake and fill with the marshmallow mixture.
  9. To make the ganache, heat cream and butter until simmering, then pour over chopped chocolate and stir until smooth.
  10. Spread a tablespoon of ganache on top of each cupcake.
  11. For decoration, mix powdered sugar and butter for the writing frosting, then pipe messages onto the cupcakes.
