Instructions
- Whisk together olive oil, lime juice, lime zest, cilantro, cumin, and garlic in a small mixing bowl to prepare the dressing.
- In a large bowl, combine the brown rice, black beans, tomatoes, bell pepper, jalapeno, corn, red onion, and avocado.
- Pour the lime dressing over the rice mixture and toss to coat evenly, seasoning with salt and pepper to taste.
