Ingredients

  • cups cooked long grain rice
  • ¾ cup canned black beans
  • ¾ cup cooked corn
  • 1 large tomato
  • 1 large scallion
  • 2-4 tbsp chopped cilantro
  • 1 tbsp fresh squeezed lime juice
  • to taste salt

Instructions

  1. Combine hot rice, heated corn, heated beans, diced tomato, diced scallion, chopped cilantro, lime juice, and salt in a large bowl.
  2. Toss the mixture well and serve.
