Ingredients

The rice

  • 4 ½ cups cooked brown rice

The mixture

  • 2 medium ripe avocados
  • 2 Tbsp fresh lime juice
  • ¼ cup chopped cilantro
  • ¼ tsp ground cumin
  • 1 small clove garlic (optional)
  • to taste salt
  • to taste freshly ground black pepper

Instructions

  1. Mash the avocados in a large mixing bowl.
  2. Stir in lime juice, cilantro, cumin, and garlic, then season with salt and pepper to taste.
  3. Stir in warm cooked rice and serve warm.
