Ingredients

The sauce

  • ½ cup Korean Gochujang Sauce
  • 1 Tbsp sesame oil
  • cup coconut aminos
  • 2-3 Tbsp maple syrup
  • 1 pinch sea salt
  • 1 ½ Tbsp chili garlic sauce

The Brussels sprouts

  • 1 Tbsp sesame oil or avocado oil
  • 7 cups halved Brussels sprouts
  • 3 Tbsp coconut aminos

For serving (optional)

  • to taste thinly sliced shallot or green onion
  • to taste chopped roasted salted peanuts

Instructions

  1. Prepare the sauce by mixing all sauce ingredients in a bowl and adjust the flavor as needed.
  2. Rinse, dry, and halve the Brussels sprouts, removing any large stem portions.
  3. Heat a skillet over medium-high heat and add oil.
  4. Add the Brussels sprouts to the skillet and season with coconut aminos, ensuring they are spread out evenly.
  5. Cover and cook for 2 minutes, then stir-fry uncovered for another 2 minutes.
  6. Once caramelized, add the optional shallot or green onion and the prepared sauce, stir-frying for 1-2 minutes more.
  7. Transfer to a serving platter and garnish with crushed peanuts if desired.
