Instructions
- Preheat the oven to 350°F and prepare a small metal loaf pan with butter or oil and parchment paper.
- Mix all dry ingredients in a medium bowl until well combined.
- Melt butter and chocolate in a microwave-safe bowl, then let cool slightly.
- Add eggs, vanilla, stevia glycerite, and vinegar to the dry ingredients and mix briefly.
- Incorporate the melted butter and chocolate into the mixture and mix until combined.
- Pour the thick batter into the prepared loaf pan and smooth the top.
- Bake for 30 minutes, then cover loosely with foil and bake for an additional 20-30 minutes until a toothpick comes out clean.
- Once baked, cover the loaf with a tea towel for about 20 minutes to retain moisture, then cool on a rack.
