Ingredients

The cake

  • 1 cup unsweetened chocolate, chopped finely
  • ½ cup butter
  • ¾ cup allulose
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon espresso powder
  • 3 large eggs
  • ½ cup cocoa powder

The frosting

  • 1 cup coconut milk
  • cups chocolate chips

Instructions

  1. Preheat the oven to 180C/350F and grease an 8-inch cake tin with parchment paper.
  2. Melt the chocolate and butter together in a microwave or saucepan until combined.
  3. Stir in the allulose, vanilla extract, and espresso powder if using.
  4. Add the eggs one at a time, mixing gently until smooth, then incorporate the cocoa powder until just combined.
  5. Pour the batter into the prepared cake tin and bake for 25 minutes until a crust forms on top.
  6. Allow the cake to cool completely in the tin before removing, frosting, and serving.
