Ingredients

The base

  • ¼ cup salted butter
  • 1 ¼ cups light corn syrup
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • 1 teaspoon vanilla extract
  • 1 ¼ cups peanut butter
  • 8 cups crisp rice cereal

The topping

  • 1 cup chocolate chips
  • 1 cup butterscotch chips

Instructions

  1. Prepare a 9X13-inch pan by greasing it or lining it with foil/parchment and greasing the lining.
  2. In a large saucepan, melt the butter, corn syrup, granulated sugar, and brown sugar over low heat.
  3. Once melted, bring the mixture to a simmer and then remove from heat.
  4. Stir in the peanut butter and vanilla until well combined.
  5. Gently mix in the crisp rice cereal until evenly coated.
  6. Press the mixture lightly into the prepared pan without compressing it too much.
  7. In a microwave-safe bowl, melt the chocolate chips and butterscotch chips in 1-minute increments at 50% power, stirring until smooth.
  8. Spread the melted chocolate mixture evenly over the bars.
  9. Allow the chocolate to cool and set before cutting into bars.
