Southern Red Beans and Rice with Smoked Turkey

Ingredients

The beans and meat

  • 1 pound dry red beans or kidney beans
  • 6 oz andouille sausage
  • ½-1 pound fully cooked smoked turkey leg or wing

The vegetables

  • ½ cup chopped celery
  • ½ cup chopped onions
  • ½ cup chopped green peppers
  • 3 cloves garlic

The broth and seasonings

  • 32-48 oz broth
  • 1 teaspoon dried thyme
  • 1 tablespoon Creole seasoning
  • 1 teaspoon cayenne pepper
  • 2 leaves bay leaves
  • to taste salt and pepper

The rice

  • as needed cooked rice

Instructions

  1. Optional: Pre-boil the smoked turkey in water for 45 minutes to 1 hour.
  2. Soak the beans in boiling water for 1 hour.
  3. Brown the sausage in a pot for 5-6 minutes, then set aside.
  4. Sauté celery, green peppers, onions, and garlic until translucent.
  5. Deglaze the pot with broth, scraping up brown bits.
  6. Add the sausage, beans, smoked turkey, spices, and bay leaves.
  7. Cover and cook on medium-low for 2-3 hours until beans are soft.
  8. Remove bay leaves and smoked turkey; shred turkey if desired.
  9. Serve the beans over cooked rice.
