Southern Red Beans and Rice with Smoked Turkey

Instructions
- Optional: Pre-boil the smoked turkey in water for 45 minutes to 1 hour.
- Soak the beans in boiling water for 1 hour.
- Brown the sausage in a pot for 5-6 minutes, then set aside.
- Sauté celery, green peppers, onions, and garlic until translucent.
- Deglaze the pot with broth, scraping up brown bits.
- Add the sausage, beans, smoked turkey, spices, and bay leaves.
- Cover and cook on medium-low for 2-3 hours until beans are soft.
- Remove bay leaves and smoked turkey; shred turkey if desired.
- Serve the beans over cooked rice.
