Thai Cabbage Salad

Ingredients

Dressing

  • 3 tablespoons fresh lime juice
  • 1 clove garlic
  • ½ inch piece fresh ginger
  • 1 tablespoon pure maple syrup
  • to taste Sriracha or other hot sauce
  • to taste salt
  • to taste black pepper
  • ¼ cup + 1 tablespoon grapeseed oil or other neutral-flavored oil

Salad

  • ½ head red cabbage
  • 1 large carrot
  • 1 medium red bell pepper
  • 1 barely ripe mango
  • 3 stalks green onions
  • ¼ cup fresh mint leaves
  • ¼ cup fresh cilantro leaves
  • ¼ cup fresh basil leaves
  • to taste salt
  • to taste black pepper
  • ½ cup roasted cashews or peanuts

Instructions

  1. Combine all dressing ingredients in a jar and shake until smooth.
  2. In a large bowl, add shredded cabbage.
  3. Use a vegetable peeler to create long strips from the carrot and add to the bowl.
  4. Remove seeds from the bell pepper, cut into strips, and add to the bowl.
  5. Peel the mango, cut around the pit, and slice into thin strips before adding to the bowl.
  6. Add sliced green onions, mint, cilantro, and basil to the salad, and season with salt and pepper.
  7. Pour the dressing over the salad and toss to coat evenly.
  8. Garnish with chopped cashews or peanuts and serve immediately.
