Ingredients

The cookie dough

  • 1 large egg
  • 1 cup almond butter
  • ¾ cup coconut sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • ½ tsp baking soda

The mix-ins

  • ¼ cup pecans, roughly chopped
  • ¼ cup dairy-free chocolate chips
  • to taste sea salt

Instructions

  1. Preheat the oven to 350°F and line baking sheets with parchment paper.
  2. In a large mixing bowl, whisk the egg and then add almond butter, coconut sugar, cinnamon, vanilla, and baking soda, mixing until a batter forms.
  3. Stir in the chopped pecans and chocolate chips.
  4. Scoop tablespoon-sized dollops of the batter onto the prepared baking sheets and sprinkle sea salt on top of each cookie.
  5. Bake for about 10 minutes or until the edges start to brown.
  6. Allow the cookies to cool on the pan for at least 5 minutes before transferring them to a wire rack.
