Ingredients

The cookie dough

  • ¾ cup unsalted butter, softened to room temperature
  • ¾ cup packed light or dark brown sugar
  • ¼ cup granulated sugar
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour (spooned & leveled)
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • ½ cup chopped unsalted or salted pecans

The toppings

  • 16 pieces wrapped caramels, cut into 4 or 5 pieces each
  • to taste sea salt for sprinkling

Instructions

  1. 1. Beat the butter, brown sugar, and granulated sugar together until fluffy, then mix in the egg and vanilla.
  2. 2. In a separate bowl, combine flour, cornstarch, baking soda, and salt, then mix into the wet ingredients until combined.
  3. 3. Add chocolate chips and pecans, then chill the dough for at least 1 hour.
  4. 4. Preheat the oven to 350°F (177°C) and prepare baking sheets.
  5. 5. Roll the dough into balls and place them on the sheets, pressing caramel pieces into the tops.
  6. 6. Bake for 11-12 minutes until edges are golden and centers look soft.
  7. 7. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
