Ingredients

  • 1 can garbanzo beans
  • ½ cup hummus or vegan mayo or tahini
  • 1 each lemon (juiced)
  • ½ cup kalamata olives (diced)
  • ½ cup red bell pepper (diced)
  • ½ cup red onion (diced)
  • ½ teaspoon garlic powder
  • to taste salt and pepper

Instructions

  1. In a large bowl, add the garbanzo beans.
  2. Mash the garbanzo beans with a fork or potato smasher, leaving some whole for texture.
  3. Add the remaining ingredients to the bowl and mix well.
  4. If the hummus is too thick, add a tablespoon of water.
  5. Adjust salt and pepper to taste.
  6. Enjoy!
