Ingredients

Popsicles

  • 1 cup salted roasted cashews
  • 1 cup canned coconut milk
  • ½ cup coconut oil
  • ½ cup unsweetened cocoa powder
  • 8 whole medjool dates (pits removed)
  • 2 tablespoons vanilla extract

Chocolate Shell

  • 6 ounces semi-sweet chocolate chips
  • 3 tablespoons coconut oil

Instructions

  1. Blend cashews, coconut milk, coconut oil, cocoa powder, dates, and vanilla extract until smooth and creamy.
  2. Spray popsicle molds or paper cups with cooking spray.
  3. Divide the mixture into the molds or cups and freeze overnight.
  4. To make the chocolate shell, melt chocolate chips and coconut oil together over medium heat until smooth.
  5. Remove popsicles from the molds or cups and dip in the chocolate shell sauce.
  6. Place dipped popsicles on a lined baking sheet and freeze for at least 10 minutes.
