Instructions
- Blend cashews, coconut milk, coconut oil, cocoa powder, dates, and vanilla extract until smooth and creamy.
- Spray popsicle molds or paper cups with cooking spray.
- Divide the mixture into the molds or cups and freeze overnight.
- To make the chocolate shell, melt chocolate chips and coconut oil together over medium heat until smooth.
- Remove popsicles from the molds or cups and dip in the chocolate shell sauce.
- Place dipped popsicles on a lined baking sheet and freeze for at least 10 minutes.
