Ingredients

Pork Butt Ingredients

  • 1 5-6 lb pork butt
  • 1 tbsp olive oil
  • ¼ cup bbq rub
  • ½ cup apple juice
  • 2 tbsp butter
  • ¼ cup Carolina Gold BBQ Sauce

Carolina Gold Mustard Sauce Ingredients

  • 1 each lemon (juice and zest)
  • ½ clove roasted garlic
  • 1 tbsp butter
  • 1 tbsp cider vinegar
  • 1 cup Dijon mustard
  • 2 tbsp molasses
  • cup honey
  • 1 tbsp smoked sugar
  • dash ginger

Instructions

  1. Combine all mustard sauce ingredients in a saucepan and reduce over low heat for 15 minutes.
  2. Remove some fat from the pork butt and score it for better rub adherence.
  3. Rub olive oil and BBQ rub over the pork butt and wrap it tightly in plastic wrap; refrigerate overnight.
  4. Prepare your smoker for indirect cooking and smoke the pork at 250°F until it reaches 150°F, spraying with apple juice hourly.
  5. Wrap the pork in foil with butter and apple juice when it reaches 150°F and continue cooking until it reaches 203°F.
  6. Let the pork rest in a cooler for about 30 minutes.
  7. Remove the pork from the cooler, discard the foil, and pull the pork using forks, mixing in remaining BBQ rub.
  8. Warm the Martin's Sandwich Potato Rolls in the oven.
  9. Assemble the sandwiches with pulled pork and drizzle with mustard sauce.
