Instructions
- Combine all mustard sauce ingredients in a saucepan and reduce over low heat for 15 minutes.
- Remove some fat from the pork butt and score it for better rub adherence.
- Rub olive oil and BBQ rub over the pork butt and wrap it tightly in plastic wrap; refrigerate overnight.
- Prepare your smoker for indirect cooking and smoke the pork at 250°F until it reaches 150°F, spraying with apple juice hourly.
- Wrap the pork in foil with butter and apple juice when it reaches 150°F and continue cooking until it reaches 203°F.
- Let the pork rest in a cooler for about 30 minutes.
- Remove the pork from the cooler, discard the foil, and pull the pork using forks, mixing in remaining BBQ rub.
- Warm the Martin's Sandwich Potato Rolls in the oven.
- Assemble the sandwiches with pulled pork and drizzle with mustard sauce.
