Ingredients

The pork

  • ¼ cup brown sugar
  • 2 tablespoons kosher salt
  • 3 tablespoons paprika
  • 1 ½ tablespoons ground black pepper
  • ½ tablespoon ground coriander
  • ½ teaspoon dry mustard
  • ½ teaspoon onion powder
  • 1 boneless pork butt or picnic shoulder about 3 pounds
  • 2 cups apple juice
  • ½ cup water
  • 1 package hamburger buns

The North Carolina BBQ Sauce

  • 2 tablespoons butter
  • ½ cup ketchup
  • 1 ½ tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon kosher salt
  • ½ teaspoon Cayenne pepper
  • 1 ½ cups apple cider vinegar

Instructions

  1. Mix brown sugar and dry spices, then rub into the pork and refrigerate for 2 hours or overnight.
  2. Preheat the oven to 300°F.
  3. Place the pork in a roasting pan, pour in apple juice and water, cover tightly with foil, and roast for 5 hours.
  4. Remove the foil and roast for an additional 30 minutes until browned and tender.
  5. Let the pork cool for 15 minutes, then shred it and mix with the drippings.
  6. To reheat, bake in a 350°F oven for 15 minutes or over a campfire for ½ hour.
  7. For the BBQ sauce, melt butter in a saucepan, add other ingredients except vinegar, and cook until sugar dissolves.
  8. Stir in vinegar and serve warm with the pork.
  9. Serve the pulled pork on buns with coleslaw, pickles, and BBQ sauce.
