Plantain Chips with Mojo Sauce

Ingredients

Mojo Sauce

  • 4 cloves garlic
  • ¼ teaspoon dried oregano
  • 1 teaspoon kosher salt
  • a pinch freshly ground black pepper
  • 2 tablespoons fresh orange juice
  • 2 tablespoons fresh lime juice
  • ¼ cup olive oil

Plantain Chips

  • 2 pieces green plantains
  • to taste teaspoon kosher salt
  • as needed cups neutral oil

Instructions

  1. Make the mojo sauce by mashing garlic, oregano, salt, and pepper into a paste.
  2. Slowly add orange juice, lime juice, and olive oil to the paste, whisking until well combined.
  3. Prepare the plantains by peeling and slicing them thinly using a vegetable peeler or mandolin.
  4. Heat about 3 inches of neutral oil in a pot to 350-360 degrees F.
  5. Carefully drop the plantain slices into the hot oil and fry for 30 seconds to 1 minute, flipping halfway through.
  6. Remove the fried plantains and transfer them to a paper towel-lined plate to drain excess oil.
  7. Sprinkle the fried plantain chips with salt and serve them with the mojo sauce.
