Instructions
- Make the mojo sauce by mashing garlic, oregano, salt, and pepper into a paste.
- Slowly add orange juice, lime juice, and olive oil to the paste, whisking until well combined.
- Prepare the plantains by peeling and slicing them thinly using a vegetable peeler or mandolin.
- Heat about 3 inches of neutral oil in a pot to 350-360 degrees F.
- Carefully drop the plantain slices into the hot oil and fry for 30 seconds to 1 minute, flipping halfway through.
- Remove the fried plantains and transfer them to a paper towel-lined plate to drain excess oil.
- Sprinkle the fried plantain chips with salt and serve them with the mojo sauce.
