Ingredients

Plantain Chips

  • 2 pieces green plantains
  • 1 teaspoon paprika
  • to taste salt
  • to taste pepper

Mango Avocado Salsa

  • 1 large mango
  • ¼ cup red onion
  • 1 medium avocado
  • 1 piece tomato
  • ½ piece jalapeño
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper

Instructions

  1. Cut both ends off the plantains and peel them.
  2. Slice the plantains thinly using a mandolin.
  3. Toss the plantain slices with salt and paprika.
  4. For baked chips, preheat the oven to 400°F (205°C) and line baking sheets with foil.
  5. Arrange the plantain slices on the baking sheets, spray lightly with canola oil, and bake for 12-20 minutes, turning halfway.
  6. For fried chips, heat ½ inch of oil in a skillet over medium-high heat.
  7. Fry the plantain slices in batches until golden brown, about 5 minutes, and drain on paper towels.
  8. For the salsa, dice the mango, red onion, avocado, tomato, and jalapeño, and mix all ingredients in a bowl.
