Instructions
- Cut both ends off the plantains and peel them.
- Slice the plantains thinly using a mandolin.
- Toss the plantain slices with salt and paprika.
- For baked chips, preheat the oven to 400°F (205°C) and line baking sheets with foil.
- Arrange the plantain slices on the baking sheets, spray lightly with canola oil, and bake for 12-20 minutes, turning halfway.
- For fried chips, heat ½ inch of oil in a skillet over medium-high heat.
- Fry the plantain slices in batches until golden brown, about 5 minutes, and drain on paper towels.
- For the salsa, dice the mango, red onion, avocado, tomato, and jalapeño, and mix all ingredients in a bowl.
