Instructions
- Heat the fat in a Dutch oven to 325°F.
- Cut the ends off the plantains and slice them into three even pieces.
- Fry the plantain pieces for 3 to 5 minutes until golden yellow, then drain on paper towels.
- Smash each fried plantain between parchment paper to form thin patties.
- Increase the oil temperature to 350°F and fry the smashed plantains until crispy, about 5 to 7 minutes.
- Transfer the fried plantains to a cooling rack and sprinkle with salt.
- Prepare the salsa by dicing the mango and avocado, and mixing them with the other salsa ingredients.
- Toss the salsa ingredients together, adjust seasoning, and serve immediately.
