Ingredients

Fried Green Plantains

  • 4 cups coconut oil, lard, or tallow
  • 4 pieces green plantains
  • to taste unit kosher salt

Mango + Avocado Salsa

  • 2 cups diced ripe mango
  • 1 cup diced Hass avocado
  • ½ cup finely diced red onion
  • ¼ cup minced fresh cilantro
  • 2 tablespoons extra virgin olive oil
  • to taste unit freshly ground black pepper
  • big pinch unit kosher salt
  • ¼ teaspoon red pepper flakes
  • 1 unit lime (juice)

Instructions

  1. Heat the fat in a Dutch oven to 325°F.
  2. Cut the ends off the plantains and slice them into three even pieces.
  3. Fry the plantain pieces for 3 to 5 minutes until golden yellow, then drain on paper towels.
  4. Smash each fried plantain between parchment paper to form thin patties.
  5. Increase the oil temperature to 350°F and fry the smashed plantains until crispy, about 5 to 7 minutes.
  6. Transfer the fried plantains to a cooling rack and sprinkle with salt.
  7. Prepare the salsa by dicing the mango and avocado, and mixing them with the other salsa ingredients.
  8. Toss the salsa ingredients together, adjust seasoning, and serve immediately.
