Ingredients

  • 2 pieces green or slightly yellow plantains
  • ½ teaspoon salt
  • 1 teaspoon smoked paprika
  • to taste freshly ground pepper
  • as needed cooking spray or oil for coating

Instructions

  1. Preheat the oven to 400°F and line baking sheets with foil, coating them with cooking spray.
  2. Cut both ends off the plantains and slit a shallow line down the long seam to peel them.
  3. Slice the plantains thinly using a mandoline or sharp knife for even results.
  4. In a bowl, combine the plantains with salt, paprika, and ground pepper, tossing them together.
  5. Arrange the plantain slices on the baking sheets in a single layer, spray lightly with oil, and bake.
  6. Turn the slices over after 10 minutes and continue baking for another 15-20 minutes until golden brown and crunchy.
  7. Serve warm or cool and store in a sealed container.
