Ingredients

The salad

  • 1 large head cauliflower
  • 1 tablespoon avocado oil
  • to taste salt & pepper
  • ¼ cup pepitas
  • ¼ cup dried cranberries
  • 2 tablespoons chopped fresh cilantro

Curry Yogurt Sauce

  • cup plain greek yogurt
  • 1 tablespoon lemon juice
  • ¾ teaspoon curry powder
  • 1 teaspoon honey
  • 1 teaspoon rice vinegar

Instructions

  1. Preheat the oven to 425°F.
  2. Prepare a baking sheet with cooking spray.
  3. In a bowl, mix cauliflower florets with avocado oil, salt, and pepper.
  4. Spread the cauliflower on the baking sheet in a single layer.
  5. Bake for 20 minutes until slightly browned.
  6. In a small bowl, combine greek yogurt, lemon juice, curry powder, honey, and rice vinegar, whisking until smooth.
  7. In a large bowl, combine roasted cauliflower, pepitas, dried cranberries, cilantro, and the curry yogurt sauce, mixing gently.
  8. Serve the salad warm or cold.
