Ingredients

The sweet potatoes

  • 4 to 5 medium sweet potatoes

The sautéed apples

  • 1 Tbsp olive oil
  • 2 Tbsp brown sugar
  • 5 medium Golden Delicious apples

The seasoning

  • ¾ to 1 cup reduced-sodium chicken broth
  • 1 tsp salt
  • tsp ground black pepper
  • ½ tsp nutmeg
  • Pinch cinnamon

The garnish

  • as needed fried rosemary

Instructions

  1. Boil sweet potatoes in salted water until tender, about 15 to 20 minutes.
  2. Drain the potatoes and set aside.
  3. In a skillet, heat olive oil and sauté apple wedges with brown sugar until tender and caramelized, about 20 to 25 minutes.
  4. Mash the sweet potatoes and gradually mix in chicken broth until fluffy.
  5. Season the mashed potatoes with salt, pepper, nutmeg, and cinnamon.
  6. In a small skillet, fry rosemary leaves in olive oil until crispy.
  7. Serve the mashed sweet potatoes topped with sautéed apples and crispy rosemary.
