Instructions
- Boil sweet potatoes in salted water until tender, about 15 to 20 minutes.
- Drain the potatoes and set aside.
- In a skillet, heat olive oil and sauté apple wedges with brown sugar until tender and caramelized, about 20 to 25 minutes.
- Mash the sweet potatoes and gradually mix in chicken broth until fluffy.
- Season the mashed potatoes with salt, pepper, nutmeg, and cinnamon.
- In a small skillet, fry rosemary leaves in olive oil until crispy.
- Serve the mashed sweet potatoes topped with sautéed apples and crispy rosemary.
