Grapefruit-Mint Granita

juice of fresh ruby red grapefruits

chopped fresh mint leaves

Instructions
- 1. Boil water, mint, and sugar in a saucepan, stirring until the sugar dissolves, then simmer uncovered for 3 minutes.
- 2. Add grapefruit juice and strain through a fine-mesh sieve, pressing solids and discarding them.
- 3. Cool the mixture completely.
- 4. Freeze the mixture in a shallow nonreactive metal container, stirring and crushing lumps with a fork every 30 minutes until evenly frozen, about 2 to 3 hours.
- 5. Scrape with a fork to lighten the texture and spoon into glasses or bowls.
