Grapefruit-Mint Granita

Ingredients

  • 2 cups juice of fresh ruby red grapefruits
  • 1 cup boiling water
  • ¾ cup chopped fresh mint leaves
  • ½ cup sugar

Instructions

  1. 1. Boil water, mint, and sugar in a saucepan, stirring until the sugar dissolves, then simmer uncovered for 3 minutes.
  2. 2. Add grapefruit juice and strain through a fine-mesh sieve, pressing solids and discarding them.
  3. 3. Cool the mixture completely.
  4. 4. Freeze the mixture in a shallow nonreactive metal container, stirring and crushing lumps with a fork every 30 minutes until evenly frozen, about 2 to 3 hours.
  5. 5. Scrape with a fork to lighten the texture and spoon into glasses or bowls.
