Raspberry Watermelon Granita

Ingredients

The granita

  • 1 small seedless watermelon (approx. 12 cups watermelon pieces)
  • 1 cup raspberries
  • 1 juiced lemon
  • 1 juiced lime
  • 2 Tbsp honey
  • 1 pinch sea salt

For garnish

  • to taste mint leaves
  • to taste raspberries

Instructions

  1. Blend all ingredients (except garnish) until smooth.
  2. Pour mixture into 2 large casserole dishes, keeping the depth no more than half an inch.
  3. Freeze for 1 hour.
  4. Scrape and mix with a fork, incorporating frozen edges into the middle.
  5. Freeze for 30 minutes and repeat scraping and mixing.
  6. Continue freezing and scraping every 30 minutes until the mixture forms small crystals.
  7. Garnish and serve in glasses or bowls.
