Hoisin Chicken

Ingredients

The chicken and vegetables

  • 4 oz chicken breast meat, sliced into thin pieces
  • 3 oz broccoli florets
  • 4 pieces shiitake mushrooms, sliced
  • ¼ small carrot, peeled and sliced
  • 2 cloves garlic, minced
  • 1 pinch salt and sugar, to taste

The marinade

  • ½ teaspoon Shaoxing rice wine or rice wine
  • ½ teaspoon cornstarch

The sauce

  • 1 tablespoon hoisin sauce
  • 1 teaspoon soy sauce
  • ½ teaspoon sesame oil
  • 3 dashes white pepper
  • ½ teaspoon cornstarch
  • 4 tablespoons water

The cooking oil

  • 2 tablespoons oil

Instructions

  1. Marinate the chicken with the marinade ingredients for about 10 minutes.
  2. In a small bowl, mix all the sauce ingredients and stir to combine well.
  3. Heat the oil in a wok and add the garlic, stir-frying until aromatic.
  4. Add the broccoli and stir-fry for a few moments.
  5. Add the marinated chicken and continue to stir-fry.
  6. Add the mushrooms, carrots, and the sauce, mixing well.
  7. Once the sauce thickens and the chicken is cooked through, adjust seasoning with salt and sugar if needed.
  8. Serve immediately with steamed rice.
