Pesto Chicken Sandwich on Sourdough

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 2 teaspoons Italian seasoning
  • to taste Salt and pepper
  • 8 slices sourdough bread
  • ΒΌ cup pesto
  • to taste Mayonnaise (optional)
  • 2 medium tomatoes, sliced
  • 4 slices Swiss cheese
  • to taste Olive oil (optional)

Instructions

  1. Pound the chicken breasts to an even thickness using a meat mallet.
  2. Season both sides of the chicken with Italian seasoning, salt, and pepper.
  3. Cook the chicken in a skillet or grill over medium heat for 5 to 8 minutes per side until fully cooked.
  4. Let the chicken rest for 5 minutes before slicing it into strips.
  5. Spread mayonnaise and pesto on the bread slices.
  6. Layer the chicken, sliced tomatoes, and Swiss cheese on the bread.
  7. Brush the outsides of the sandwiches with olive oil or mayonnaise.
  8. Toast the sandwiches in a skillet until both sides are golden and the cheese is melted.
