Ingredients

The chicken salad

  • 6 oz boneless, skinless Chicken Breast
  • ½ tsp Kosher Salt
  • ½ tsp Freshly Cracked Black Pepper
  • ½ tsp Garlic Powder
  • ½ tsp Italian Seasoning
  • 1 tbsp Olive Oil
  • 1 medium Avocado
  • 2 tbsp Basil Pesto
  • 2 tbsp Mayonnaise
  • ¼ cup chopped Celery
  • ¼ cup chopped Green Onion
  • ¼ cup chopped Nuts (Pecans, Walnuts, etc.)
  • 1 wedge Lemon

The bread

  • 2 pieces Croissants

Instructions

  1. Mix the seasoning blend and sprinkle half on the chicken breast, letting it sit for 10 minutes.
  2. Heat olive oil in a pan and cook the chicken for 4-5 minutes per side until cooked through.
  3. Transfer the chicken to a bowl to cool.
  4. Mash the avocado in a bowl and mix in the pesto, mayonnaise, green onion, celery, and remaining seasoning.
  5. Shred or cube the chicken and add it to the avocado mixture, then squeeze in lemon juice.
  6. Divide the mixture between croissants and serve.
