Instructions
- Butterfly the chicken breast and season with spices, then coat with flour.
- Whisk eggs and buttermilk in a bowl, then add the chicken to the mixture.
- Combine breadcrumbs, Parmesan cheese, and garlic powder in a zip lock bag, add the chicken, and shake to coat.
- Heat oil in a pan over medium heat and cook the chicken for 4 minutes on each side, then set aside.
- In a pan, combine tomato sauce, Parmesan cheese, oregano, and black pepper, cooking on low until bubbling, then simmer.
- Preheat the oven to 400°F, place chicken on a baking sheet, top with tomato sauce and provolone cheese, and bake for 7 minutes until cheese melts.
- Mix all basil pesto mayo ingredients in a bowl until smooth.
- Spread basil pesto mayo on the buns, layer with chicken and shaved cheese, then add the top bun and serve hot.
