Ingredients

The Chicken

  • 1 lb Boneless Chicken Breast
  • 1 cup Italian Breadcrumbs
  • ½ cup Grated Parmesan Cheese
  • 2 Large Organic Eggs
  • ¼ cup Buttermilk
  • 4 slices Provolone Cheese
  • ½ cup Shaved Tuscan/Fontina Cheese
  • 1 tsp Garlic Powder
  • 1 tsp Paprika
  • 2 tsp Ground Cumin
  • ½ tsp Himalayan Salt
  • 2 tsp Black Pepper
  • ¼ cup All Purpose Flour
  • 4 Brioche Burger Buns

The Sauce

  • 15 oz Tomato Sauce
  • ¼ cup Grated Parmesan Cheese
  • ½ tsp Black Pepper
  • 1 tsp Oregano

The Basil Pesto Mayo

  • ¼ cup Mayo
  • 1 tsp Basil Pesto Sauce
  • ¼ tsp Lemon Juice
  • ¼ tsp Garlic Powder
  • ½ tsp Black Pepper
  • ¼ tsp Himalayan Salt

Instructions

  1. Butterfly the chicken breast and season with spices, then coat with flour.
  2. Whisk eggs and buttermilk in a bowl, then add the chicken to the mixture.
  3. Combine breadcrumbs, Parmesan cheese, and garlic powder in a zip lock bag, add the chicken, and shake to coat.
  4. Heat oil in a pan over medium heat and cook the chicken for 4 minutes on each side, then set aside.
  5. In a pan, combine tomato sauce, Parmesan cheese, oregano, and black pepper, cooking on low until bubbling, then simmer.
  6. Preheat the oven to 400°F, place chicken on a baking sheet, top with tomato sauce and provolone cheese, and bake for 7 minutes until cheese melts.
  7. Mix all basil pesto mayo ingredients in a bowl until smooth.
  8. Spread basil pesto mayo on the buns, layer with chicken and shaved cheese, then add the top bun and serve hot.
