Ingredients

The salad

  • 6 cups arugula
  • 2 medium pears, cored and sliced thin
  • cup red onion, thinly sliced
  • ½ cup pecans
  • ½ cup feta cheese
  • ¼ cup dried cranberries

The dressing

  • ½ cup sherry shallot dressing

Instructions

  1. Make the dressing by combining sherry vinegar, garlic, shallot, honey, olive oil, dijon mustard, salt, and pepper in a small bowl or blender.
  2. Toast the pecans in the oven, stove, or air fryer until browned and fragrant.
  3. In a large bowl, layer the arugula, pear slices, red onion, toasted pecans, feta cheese, and dried cranberries.
  4. Drizzle the dressing over the salad and toss to combine. Serve immediately or top with grilled chicken or salmon.
