Grilled Pear and Arugula Salad

Ingredients

The salad

  • 4 cups arugula
  • ½ cup fresh cilantro, chopped
  • ¼ cup shaved radish
  • ¼ cup shaved English cucumber
  • 2 tablespoons champagne vinegar
  • Kosher salt to taste

The dressing

  • ¼ cup walnut oil
  • 1 tablespoon olive oil

The fruit

  • 2 large pears, cored and quartered

Instructions

  1. Preheat the grill to high.
  2. In a large mixing bowl, combine arugula, cilantro, radish, cucumber, walnut oil, vinegar, and salt, then toss until well coated.
  3. Spread olive oil on all surfaces of the pears.
  4. Place the pears on the grill and cook for 1 to 2 minutes until grill marks appear, then flip and grill for another 1 to 2 minutes.
  5. Remove the pears from heat and arrange them on plates, adding the salad to the center of each plate before serving.
