Grilled Shrimp and Pear Salad

Ingredients

The salad

  • 1 lb. shrimp (peeled and de-veined)
  • to taste salt and pepper
  • ¼ teaspoon rosemary
  • ½ teaspoon ground all spice
  • 1-2 Bartlett pears
  • ½ cup crumbled blue cheese
  • ¼ cup pumpkin seeds
  • ¼ cup dried cranberries
  • to taste salad greens

The vinaigrette

  • tablespoons balsamic vinegar
  • 1 tablespoon fresh orange juice
  • ½ teaspoon fresh lemon juice
  • ¼ cup olive oil
  • 3-4 teaspoons honey

Instructions

  1. Season the shrimp with salt, pepper, rosemary, and all spice.
  2. Prepare the vinaigrette by whisking together all vinaigrette ingredients.
  3. Thinly slice the pears and grill them until they have nice grill marks.
  4. Grill the shrimp until they turn pink.
  5. Toast the pumpkin seeds in a hot pan for about a minute.
  6. In a large salad bowl, layer the greens, cranberries, pumpkin seeds, and shrimp with some vinaigrette.
  7. Gently toss and add the grilled pears and crumbled blue cheese, then drizzle the remaining vinaigrette.
