Slow Cooker Asian Chicken Lettuce Wraps

Instructions
- Microwave ground chicken and garlic until the chicken is no longer pink, about 5-6 minutes.
- Drain the liquid and transfer the mixture to a slow cooker.
- Add bell pepper, onion, hoisin sauce, soy sauce, salt, and pepper to the slow cooker and toss to combine.
- Cover and cook on low for 2-3 hours until the chicken is tender.
- Stir in water chestnuts, cooked rice, green onions, rice vinegar, and sesame oil, and cook until heated through for 3-5 minutes.
- Season with additional salt if desired, separate lettuce leaves, and serve with the chicken filling.
