Slow Cooker Asian Chicken Lettuce Wraps

Ingredients

The filling

  • 2 lbs ground chicken
  • 3 cloves garlic
  • 1 medium red bell pepper
  • ½ cup yellow onion
  • ½ cup hoisin sauce
  • 2 Tbsp soy sauce
  • 1 can sliced water chestnuts
  • cups cooked white or brown rice
  • 3 medium green onions
  • 1 Tbsp rice vinegar
  • tsp sesame oil

The wraps

  • 2 heads iceberg lettuce

Instructions

  1. Microwave ground chicken and garlic until the chicken is no longer pink, about 5-6 minutes.
  2. Drain the liquid and transfer the mixture to a slow cooker.
  3. Add bell pepper, onion, hoisin sauce, soy sauce, salt, and pepper to the slow cooker and toss to combine.
  4. Cover and cook on low for 2-3 hours until the chicken is tender.
  5. Stir in water chestnuts, cooked rice, green onions, rice vinegar, and sesame oil, and cook until heated through for 3-5 minutes.
  6. Season with additional salt if desired, separate lettuce leaves, and serve with the chicken filling.
