Ingredients

  • cup soy protein powder (chocolate or vanilla)
  • cup agave (or other sticky sweetener)
  • 1 Tbsp agave (or other sticky sweetener)
  • cup almond butter
  • ¼ cup unsweetened cocoa powder
  • 1 tsp instant coffee or espresso
  • ¼ tsp peppermint extract (optional)
  • 7 pieces peppermints, crushed

Instructions

  1. Mix the protein powder, agave, almond butter, cocoa, instant coffee, and peppermint extract in a bowl until well combined.
  2. Chill the dough in the fridge for 15-20 minutes to firm it up.
  3. Crush the peppermints into small pieces using a rolling pin or food processor.
  4. Remove the dough from the fridge and roll 1 tablespoon of dough into balls.
  5. Coat the dough balls with the crushed peppermints.
  6. Return the coated balls to the fridge for another 10-15 minutes to firm up.
  7. Enjoy your peppermint mocha protein energy bites!
