Ingredients

  • ¼ cup crushed dark chocolate chips
  • ¼ cup crushed espresso beans
  • cup almond meal or other nut flour
  • ¼ cup coconut flour
  • ⅓–½ cup chocolate nut butter
  • 6–8 tablespoon Vanilla or Chocolate Protein
  • ¼ to ⅓ cup raw honey or agave syrup
  • 1 tsp peppermint extract
  • Optional- ¼ teaspoon vanilla extract
  • 1 tablespoon crushed peppermint

Instructions

  1. Blend the chocolate and espresso beans in a food processor.
  2. Transfer the mixture into a large bowl and add all remaining ingredients, mixing well.
  3. Roll the mixture into bite-sized balls.
  4. Coat the bites with extra cocoa powder or protein powder if desired.
  5. Freeze or refrigerate to maintain freshness.
