Instructions
- Prepare the sauce by mixing tomato puree, hot sauce, lime juice, soy sauce, cumin, and ancho chile powder in a bowl.
- In another bowl, combine cornmeal, salt, and pepper.
- Heat oil in a large nonstick skillet over medium heat.
- Coat tofu cubes in the sauce, then in the cornmeal mixture, and cook in the skillet until browned and crisp on both sides.
- Transfer cooked tofu to a paper towel-lined plate and repeat until all tofu is cooked.
- For the guacamole, mash avocados in a bowl and mix in cilantro, lime juice, tomato, onion, jalapeño, and garlic. Season with salt and pepper.
- Assemble the sandwiches with tofu, guacamole, and lettuce in the rolls.
