Ingredients

The cornmeal-crusted tofu

  • ½ cup tomato puree
  • 1 tablespoon cayenne pepper hot sauce
  • 1 tablespoon lime juice
  • 1 tablespoon soy sauce
  • 2 teaspoons ground cumin
  • 1 teaspoon ancho chile powder
  • 1 pound extra-firm tofu
  • 1 cup cornmeal
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ to ⅓ cup vegetable oil

The guacamole

  • 2 ripe avocados
  • ¼ cup finely chopped fresh cilantro
  • 3 tablespoons lime juice
  • 1 medium tomato
  • ½ medium red onion
  • 1 jalapeño pepper
  • 1 garlic clove
  • to taste salt and pepper

For serving

  • 4 6-inch sandwich rolls
  • 4 large lettuce leaves

Instructions

  1. Prepare the sauce by mixing tomato puree, hot sauce, lime juice, soy sauce, cumin, and ancho chile powder in a bowl.
  2. In another bowl, combine cornmeal, salt, and pepper.
  3. Heat oil in a large nonstick skillet over medium heat.
  4. Coat tofu cubes in the sauce, then in the cornmeal mixture, and cook in the skillet until browned and crisp on both sides.
  5. Transfer cooked tofu to a paper towel-lined plate and repeat until all tofu is cooked.
  6. For the guacamole, mash avocados in a bowl and mix in cilantro, lime juice, tomato, onion, jalapeño, and garlic. Season with salt and pepper.
  7. Assemble the sandwiches with tofu, guacamole, and lettuce in the rolls.
