Grilled Banana Bread Pudding

Ingredients

  • 3 pieces bananas
  • 1 loaf day old bread
  • 3 pieces eggs
  • 1 12 oz. can evaporated milk
  • 1 12 oz. can coconut milk
  • 1 8 oz. can cream of coconut
  • ¼ cup milk
  • 1 tsp sweetened condensed milk
  • ¼ cup raisins
  • 1 tsp nutmeg
  • 2 tsp cinnamon
  • 1 cup brown sugar
  • 1 pinch salt
  • ½ stick unsalted butter

Instructions

  1. Preheat the cast iron on the grill and melt ¼ stick of butter.
  2. Slice the bananas, coat them in the butter, and sprinkle brown sugar on them, cooking on low flame until caramelized.
  3. Remove the bananas and set aside.
  4. In a large mixing bowl, combine all wet ingredients and mix well.
  5. Add cubed bread to the mixture, ensuring it's fully soaked.
  6. Incorporate the bananas, reserving a few for topping.
  7. Butter the cast iron and pour the mixture in, placing remaining bananas on top and sprinkling more brown sugar.
  8. Grill on the lowest temperature area covered with aluminum foil for about an hour.
  9. Uncover and cook on medium to high heat for the last 10 minutes to create a crust.
  10. Serve warm with ice cream and/or whipped cream.
