Vegan Cucumber Tea Sandwiches

The cream cheese

vegan herbed cashew cream cheese or store-bought vegan cream cheese
Instructions
- Prepare the avocados by cutting them in half, removing the pit and skin, and mashing them with a fork until smooth. Add ¼ teaspoon salt and set aside.
- Cut the crusts off the bread if desired, then cut each slice into four equal squares or use a biscuit cutter for circles.
- Spread cream cheese on half of the bread slices and mashed avocado on the other half.
- Slice the cucumber thinly and sprinkle with the remaining ¼ teaspoon salt and black pepper.
- Assemble the sandwiches by placing 2-3 cucumber slices and 2-3 matchstick pieces of bell pepper between an avocado slice and a cream cheese slice.
- Serve immediately.
