Ingredients

The batter

  • 1 cup coconut milk
  • cup water
  • 5 large eggs
  • ¾ cup coconut flour
  • ¾ cup arrowroot or tapioca flour
  • 2 tablespoons organic coconut oil
  • 2 tablespoons honey
  • 1 teaspoon baking soda

For cooking

  • as needed coconut oil

Instructions

  1. Blend all the ingredients until smooth, adding water if necessary to achieve the right consistency.
  2. Preheat a 12-inch skillet over low to medium heat and add some coconut oil.
  3. Pour the batter into the skillet to form small pancakes, spreading them to about 4 inches wide.
  4. Cook each pancake until fully cooked through on both sides.
