Vegan Dark Chocolate Bars

Instructions
- 1. Prepare a double boiler by adding water to a saucepan and bringing it to a simmer.
- 2. Place a glass or ceramic mixing bowl on top, ensuring it doesn't touch the water.
- 3. Add the cacao butter and coconut oil to the bowl and let them melt, stirring occasionally.
- 4. Once melted, remove the bowl from heat and sift the cocoa powder into the mixture, stirring until combined.
- 5. Stir in the maple syrup and add optional salt and vanilla if desired. Adjust sweetness to taste.
- 6. Pour the chocolate mixture into molds and sprinkle with cacao nibs.
- 7. Transfer to the freezer until set, about 1 hour.
- 8. Store the chocolate in the refrigerator or freezer until ready to enjoy.
