Toasted Coconut Lime Rice Krispie Treats

coconut extract (optional)
Instructions
- Preheat the oven to 400°F and spread coconut on a baking sheet to toast for 10-15 minutes, stirring occasionally.
- While the coconut is toasting, line a 9x13 inch pan with foil and spray it with non-stick spray.
- Reserve ½ cup of toasted coconut and combine the remaining toasted coconut with the Rice Krispies in a large bowl.
- Melt the butter in a pot over medium-high heat, then reduce to low and add the marshmallows, stirring until melted and smooth.
- Stir in the lime zest and pour the mixture over the Rice Krispies and coconut, mixing well to coat.
- Transfer the mixture to the prepared pan and gently press it down evenly.
- Melt the almond bark in the microwave and drizzle it over the treats, then sprinkle with the reserved coconut.
- Allow the bars to set before cutting into squares.
