Instructions
- Toast the quinoa and all-purpose flour in a skillet over medium heat until golden and fragrant, then cool in the refrigerator.
- Cream the butter and sugar together until light and fluffy.
- Mix in the cooled flours and add the shaved chocolate until just combined.
- Shape the dough into a patty, wrap it, and chill in the refrigerator for about 45 minutes.
- Preheat the oven to 350°F (180°C) and prepare baking sheets with parchment paper.
- Roll out the chilled dough to ¼-inch thickness and cut into desired shapes.
- Sprinkle the cookies with sugar flakes and place them on the baking sheets, spaced apart.
- Bake for 12 to 14 minutes until the bottoms are golden, then cool on a rack.
