Ingredients

The dough

  • ¾ cup quinoa flour
  • 1 cup all-purpose flour
  • ½ teaspoon fine grain sea salt
  • 1 cup unsalted butter
  • 1 cup sifted fine-grain natural cane sugar
  • ½ cup shaved chocolate

Topping

  • 3 tablespoons large-grain sugar flakes

Instructions

  1. Toast the quinoa and all-purpose flour in a skillet over medium heat until golden and fragrant, then cool in the refrigerator.
  2. Cream the butter and sugar together until light and fluffy.
  3. Mix in the cooled flours and add the shaved chocolate until just combined.
  4. Shape the dough into a patty, wrap it, and chill in the refrigerator for about 45 minutes.
  5. Preheat the oven to 350°F (180°C) and prepare baking sheets with parchment paper.
  6. Roll out the chilled dough to ¼-inch thickness and cut into desired shapes.
  7. Sprinkle the cookies with sugar flakes and place them on the baking sheets, spaced apart.
  8. Bake for 12 to 14 minutes until the bottoms are golden, then cool on a rack.
