Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Make flax eggs by combining flaxseed meal with warm water and set aside to thicken.
- In a food processor, grind the almonds and quinoa flakes until fine, then mix with baking soda and salt in a large bowl.
- In a separate bowl, mix the flax eggs, almond butter, applesauce, maple syrup, and vanilla until well combined.
- Slowly add the wet mixture to the dry ingredients and mix well.
- Fold in the chocolate chips.
- Using a cookie scoop, drop the cookie mixture onto the prepared baking sheet.
- Bake for 12 to 15 minutes until lightly golden brown.
- Remove from the oven and let sit for 5 minutes before transferring to a cooling rack.
