Instructions
- Cook quinoa in water according to package directions and set aside.
- In a saucepan, combine peanut butter, honey, coconut oil, vanilla, and salt over low heat until smooth.
- Remove from heat and stir in almond meal, coconut, and quinoa until combined.
- Let the mixture cool, then fold in chocolate chips.
- Scoop rounded tablespoons onto a parchment-lined baking sheet and flatten slightly.
- Refrigerate until firm, about 40 minutes.
