Ingredients

  • ½ cup uncooked quinoa
  • ½ cup peanut butter
  • ¼ cup honey or pure maple syrup
  • 2 tablespoons coconut oil
  • 1 tablespoon pure vanilla extract
  • ¼ teaspoon kosher salt
  • ¼ cup almond meal
  • ¼ cup unsweetened flaked coconut
  • cup dark chocolate chips

Instructions

  1. Cook quinoa in water according to package directions and set aside.
  2. In a saucepan, combine peanut butter, honey, coconut oil, vanilla, and salt over low heat until smooth.
  3. Remove from heat and stir in almond meal, coconut, and quinoa until combined.
  4. Let the mixture cool, then fold in chocolate chips.
  5. Scoop rounded tablespoons onto a parchment-lined baking sheet and flatten slightly.
  6. Refrigerate until firm, about 40 minutes.
