Monster Quinoa Almond Butter Cookies

Ingredients

Wet Ingredients

  • ½ cup coconut milk (or almond milk)
  • ¼ tsp guar gum or xanthan gum
  • 1 tbsp flax seed meal or ½ tbsp chia seed meal
  • ¼ cup honey or coconut sugar
  • ¼ tsp vanilla liquid stevia
  • ¼ tsp sea salt

Dry Ingredients

  • ½ cup almond butter
  • ½ cup Sunbutter
  • ¼ cup coconut flour
  • ½ cup quinoa flakes
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ cup dairy-free chocolate chips
  • ½ cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F.
  2. In a bowl, combine coconut milk, guar gum or xanthan gum, flax seed meal or chia seed meal, and honey or coconut sugar, and mix with an electric mixer.
  3. Add vanilla liquid stevia and sea salt, then mix in almond butter, Sunbutter, coconut flour, quinoa flakes, baking soda, and baking powder.
  4. Fold in dairy-free chocolate chips and chopped walnuts.
  5. Roll the dough into balls and flatten them between your hands.
  6. Place the flattened cookies on unbleached parchment paper on a cookie sheet.
  7. Bake for about 20 minutes.
  8. To keep the cookies crunchy, store them covered with a cloth napkin instead of in an airtight container.
