Instructions
- Preheat the oven to 350°F.
- In a bowl, combine coconut milk, guar gum or xanthan gum, flax seed meal or chia seed meal, and honey or coconut sugar, and mix with an electric mixer.
- Add vanilla liquid stevia and sea salt, then mix in almond butter, Sunbutter, coconut flour, quinoa flakes, baking soda, and baking powder.
- Fold in dairy-free chocolate chips and chopped walnuts.
- Roll the dough into balls and flatten them between your hands.
- Place the flattened cookies on unbleached parchment paper on a cookie sheet.
- Bake for about 20 minutes.
- To keep the cookies crunchy, store them covered with a cloth napkin instead of in an airtight container.
