Ingredients

The chicken

  • 3 pounds boneless skinless chicken breasts
  • 4 oz butter (ghee or olive oil)

The sauce

  • 6 oz tomato paste
  • cup low carb brown sugar (Sukrin Gold, Swerve Brown, Lakanto, or Besti)
  • 3 tablespoons cider vinegar
  • 3 tablespoons red wine vinegar (or more cider vinegar)
  • 2 tablespoons prepared yellow mustard
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon liquid smoke
  • ½ teaspoon celery salt
  • teaspoon ground cloves

Instructions

  1. Let the chicken warm up for 20-30 minutes before cooking.
  2. Mix all sauce ingredients in a bowl and whisk together.
  3. Place the chicken in the crockpot in a single layer.
  4. Spread the sauce over the chicken and cover with the lid.
  5. Cook on high for 3-4 hours or low for 6-8 hours until the chicken reaches 160°F.
  6. Remove the chicken to rest for 10 minutes, tented with foil.
  7. Shred the chicken using two forks and return it to the crockpot with melted butter.
  8. Stir to combine and adjust the flavor as needed before serving.
