Ingredients

The chicken

  • 2 to 2¼ lbs boneless, skinless chicken thighs

The sauce

  • cups gluten-free BBQ sauce
  • tablespoons apple cider vinegar
  • 2 tablespoons honey or maple syrup
  • 2 teaspoons minced garlic
  • ½ teaspoon black pepper
  • ⅛ to ¼ teaspoon kosher salt
  • ¼ teaspoon smoked paprika (optional)

Instructions

  1. Combine the BBQ sauce, apple cider vinegar, honey, garlic, black pepper, and salt in the crockpot.
  2. Pat the chicken thighs dry and place them in the crockpot, coating them with the sauce.
  3. Cook on HIGH for 3 to 3½ hours or LOW for 5 to 6 hours, turning the thighs at least once.
  4. Transfer the thighs to a baking sheet and broil for 3 minutes or air fry at 400°F for 3 minutes.
  5. Let the chicken rest for 5 minutes and garnish with chopped parsley before serving.
