Deviled Eggs

Instructions
- Boil water in a medium pot to cover the eggs by at least one inch.
- Reduce heat to a low simmer and carefully lower the eggs into the water.
- Simmer the eggs gently for 18 minutes (or 16 minutes if at room temperature).
- Remove the eggs and submerge them in cold water until cool enough to handle.
- Peel the eggs and rinse them to remove any shell bits.
- Cut each egg in half and place the yolks in a bowl.
- Add Greek yogurt, mayonnaise, mustard, and 1 teaspoon of chives to the yolks and mix well.
- If the mixture is too thick, add a teaspoon or two of water until creamy.
- Taste the mixture and add salt if needed.
- Pipe or spoon the yolk mixture into the egg white halves.
- Garnish with remaining chives and refrigerate until ready to serve.
