Deviled Eggs

Ingredients

The eggs

  • 6 large eggs

The filling

  • 1 tbs Greek yogurt
  • 1 tbs mayonnaise
  • ½ tsp mustard
  • 2 tsp chives
  • 1 to 2 tsp water
  • to taste salt

Instructions

  1. Boil water in a medium pot to cover the eggs by at least one inch.
  2. Reduce heat to a low simmer and carefully lower the eggs into the water.
  3. Simmer the eggs gently for 18 minutes (or 16 minutes if at room temperature).
  4. Remove the eggs and submerge them in cold water until cool enough to handle.
  5. Peel the eggs and rinse them to remove any shell bits.
  6. Cut each egg in half and place the yolks in a bowl.
  7. Add Greek yogurt, mayonnaise, mustard, and 1 teaspoon of chives to the yolks and mix well.
  8. If the mixture is too thick, add a teaspoon or two of water until creamy.
  9. Taste the mixture and add salt if needed.
  10. Pipe or spoon the yolk mixture into the egg white halves.
  11. Garnish with remaining chives and refrigerate until ready to serve.
