Ingredients

  • 6 tortillas tortillas
  • 1 can refried beans
  • 2 avocados avocados
  • 1 cup fresh sprouts
  • ½ cup fresh cilantro
  • 1 cup cherry tomatoes
  • ¼ cup kimchi

Instructions

  1. Preheat the oven to 300°F.
  2. Place the tortillas on a parchment-lined sheet pan and set aside.
  3. Heat the refried beans in a small pan until hot throughout.
  4. Prepare the sprouts, cilantro, and tomatoes by washing and chopping them into bite-sized pieces.
  5. Make guacamole with the avocados, saving some for garnish.
  6. Warm the tortillas in the oven for about 3 minutes.
  7. Layer the beans, protein substitute, vegetables, and guacamole on the tortillas.
  8. Serve and enjoy!
