Ingredients

The filling

  • 1 16-ounce can refried beans
  • ¼ teaspoon cumin
  • ½ teaspoon salt
  • 2 cups freshly shredded cheese

The shells

  • 12 pieces corn tortillas
  • as needed none neutral oil (like avocado oil) for frying

Instructions

  1. Combine refried beans, cumin, and salt in a bowl and mix until smooth.
  2. Place 2 tablespoons of the bean mixture in the center of each tortilla, add cheese, and fold the tortilla in half.
  3. Heat oil in a skillet over medium heat.
  4. Fry the tacos in the skillet for about 3 minutes until golden brown on one side, then flip and cook for another 2-3 minutes.
  5. Remove tacos and let them drain on paper towels or a wire rack.
  6. Add desired toppings and serve.
