Ingredients

The taquitos

  • 14 pieces corn tortillas
  • 1 16-ounce can refried beans
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • 1 ½ cups Mexican blend shredded cheese
  • as needed tablespoon avocado oil for frying

Optional avocado salsa

  • 1 piece avocado
  • ½ tablespoon white vinegar
  • 2 tablespoons cilantro
  • 2 tablespoons onion, chopped
  • 6 tablespoons water

Additional toppings (optional)

  • as needed cup pico de gallo
  • ½ cup crema or sour cream

Instructions

  1. Preheat the oven or air fryer to 400°F.
  2. Wrap the stack of tortillas in a damp paper towel and microwave for about 1 minute.
  3. Season the refried beans with cumin and salt, mixing well.
  4. Spread 1 ½ tablespoons of refried beans on each tortilla, then sprinkle 1 ½ tablespoons of cheese on top.
  5. Roll the taquitos tightly and place them seam side down on a baking sheet.
  6. In a medium frying pan, heat avocado oil over medium-high heat.
  7. Fry the taquitos in batches, flipping frequently until golden brown on all sides.
  8. Transfer the fried taquitos to a baking sheet and bake in the oven for 15 to 20 minutes until heated through.
  9. For the optional avocado salsa, blend the avocado, white vinegar, cilantro, onion, and water until smooth.
  10. Serve the taquitos hot with optional toppings like pico de gallo and crema.
