Instructions
- Preheat the oven or air fryer to 400°F.
- Wrap the stack of tortillas in a damp paper towel and microwave for about 1 minute.
- Season the refried beans with cumin and salt, mixing well.
- Spread 1 ½ tablespoons of refried beans on each tortilla, then sprinkle 1 ½ tablespoons of cheese on top.
- Roll the taquitos tightly and place them seam side down on a baking sheet.
- In a medium frying pan, heat avocado oil over medium-high heat.
- Fry the taquitos in batches, flipping frequently until golden brown on all sides.
- Transfer the fried taquitos to a baking sheet and bake in the oven for 15 to 20 minutes until heated through.
- For the optional avocado salsa, blend the avocado, white vinegar, cilantro, onion, and water until smooth.
- Serve the taquitos hot with optional toppings like pico de gallo and crema.
